Rustic Cream Cheese Stuffed Mushrooms

If there is anything I will never turn down, stuffed mushrooms are at the top of the list. I’m obsessed. They are great for holiday spreads, game days, and potlucks. When I make them for parties, I make a few extra to test for quality control. It’s an important job, and somebody has to do it.

These stuffed mushrooms are packed with sautéed onions, garlic, cream cheese, crispy bacon, Parmesan, and buttery herb breadcrumbs. They bake up golden brown on top while staying creamy and flavorful inside. And they are a great make-ahead option to keep party day as stress-free as possible. They are rich and creamy and bake up golden and delicious.

Ingredients

Mushrooms

  • 24 large white button or baby bella mushrooms

  • 1 tablespoon olive oil

Stuffing

  • 8 ounces cream cheese, softened

  • 1 small sweet onion, finely diced

  • 3 cloves garlic, minced

  • 4 slices bacon, cooked and crumbled

  • ½ cup grated Parmesan cheese

  • 2 tablespoons fresh parsley, chopped

  • 1 teaspoon fresh thyme leaves

  • ¼ teaspoon black pepper

  • Pinch of salt

Topping

  • ½ cup seasoned breadcrumbs

  • 2 tablespoons melted butter

  • 2 tablespoons Parmesan cheese

Instructions

1. Prepare the Mushrooms

  • Preheat oven to 375°F.

  • Wipe mushrooms clean and remove stems. Finely chop the stems and set aside.

  • Place mushroom caps on a parchment-lined baking sheet.

2. Make the Filling

  • Cook bacon until crisp. Remove and crumble.

  • In the same skillet, sauté onion and chopped mushroom stems over medium heat until soft and golden, about 8 minutes.

  • Add garlic and cook for 30 seconds more.

  • Allow mixture to cool slightly.

In a bowl, combine:

  • Cream cheese

  • Onion mixture

  • Bacon

  • Parmesan

  • Parsley

  • Thyme

  • Pepper

  • Salt

Mix until smooth.

3. Stuff the Mushrooms

Fill each mushroom cap generously with the cream cheese mixture.

Arrange on the baking sheet.

4. Add the Crunchy Topping

Mix breadcrumbs, melted butter, and Parmesan.

Sprinkle over each stuffed mushroom.

5. Bake

Bake for 20–25 minutes until mushrooms are tender and the tops are golden brown.

Serve warm.
