Rustic Honey Butter Glazed Carrots
This side dish is easy and sometimes I just need it. I could eat these carrots until my skin turns orange. It’s a cozy side dish that's beautiful enough for a holiday table but it’s easy enough for a weeknight dinner because it uses simple ingredients and comes together in about 30 minutes. It pairs beautifully with chicken, pork, and beef. And of course, it’s healthy and delicious. Plus it looks so pretty on the plate. Rustic Honey Butter Glazed Carrots
Rustic Honey Butter Glazed Carrots

Ingredients
2 pounds carrots, peeled and sliced on the diagonal
2 tablespoons butter
2 tablespoons honey
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
½ teaspoon sea salt
¼ teaspoon black pepper
1 tablespoon chopped fresh parsley, for garnish
Instructions
Bring a large pot of salted water to a boil.
Add the carrots and cook for 8–10 minutes, or until just tender.
Drain well and return the carrots to the pot.
Add the butter, honey, thyme, salt, and pepper.
Stir gently over low heat until the butter melts and the carrots are coated in the glaze.
Transfer to a serving dish and sprinkle with fresh parsley.
Serve warm.
Notes
For extra flavor, add a pinch of cinnamon.
Baby carrots can be used if that's what you have on hand.
Leftovers keep well in the refrigerator for up to 3 days.
