Korean-Style Beef Tacos With Quick-Pickled Radishes and Cucumbers
What makes a taco a taco? When I hear taco, I think of Mexican food (my absolute favorite!). I just love anything wrapped in a tortilla shell. And while I adore tacos, no one wants to eat the same thing all the time. So I’m always trying to find sneaky ways to bring different flavors and twists to our weekly taco Tuesday.
Ingredients & Method
For the Tacos
1 lb ground beef (80/20 or 85/15)
4 cups green cabbage, thinly shredded
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
1 teaspoon brown sugar or honey
½ teaspoon black pepper
¼ teaspoon crushed red pepper flakes (optional)
2 green onions, sliced
flour tortillas
Method
Brown the ground beef in a large skillet over medium-high heat.
Add onion and cook until softened, about 4 minutes.
Stir in garlic and ginger; cook 30 seconds.
Drain excess grease if needed.
Add cabbage and cook 3–5 minutes until slightly wilted.
In a small bowl, combine:
soy sauce
hoisin
sesame oil
rice vinegar
brown sugar
black pepper
Pour sauce over the beef mixture and toss well.
Simmer 2–3 minutes until most liquid is absorbed.
Stir in green onions and remove from heat.
For the Toppings
The sky is the limit for toppings, since this filling is rich, savory, and slightly sweet, the toppings should bring acidity, freshness, crunch, and a little creaminess.
Quick Pickled Radish and Cucumber
4–5 radishes, thinly sliced
1 English cucumber, thinly sliced
½ cup rice vinegar
½ cup water
1 tablespoon sugar
1 teaspoon kosher salt
Mix together and let sit 20–30 minutes.
Spicy Lime Crema
Mix together:
½ cup sour cream (or plain Greek yogurt)
Juice of 1 lime
1 teaspoon sriracha
1 tsp honey
¼ teaspoon kosher salt
Additional Toppings
cilantro
squeeze of lime
minced white onion
sliced jalapeno (optional)
