Creamy Roasted Tomato Basil Soup
Summer means tomatoes. I always have a plethora, and while I can some and dry some, there’s plenty to eat fresh from the garden too! This tomato soup recipe is made with roasted tomatoes, onions, and garlic, then blended until silky smooth with fresh basil and a splash of cream. Ingredients
For the Roasted Vegetables
3 pounds Roma tomatoes, halved
1 large yellow onion, cut into wedges
1 whole head garlic, top sliced off
3 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon black pepper
For the Soup
3 cups chicken broth (or vegetable broth)
1 cup fresh basil leaves, packed
1 teaspoon sugar (optional, depending on tomato sweetness)
½ teaspoon dried oregano
½ cup heavy cream
2 tablespoons butter
For Serving
Fresh basil leaves
Freshly grated Parmesan cheese
Crusty sourdough bread
Homemade rustic croutons
Method
Step 1: Roast the Vegetables
Preheat oven to 425°F.
Arrange tomatoes, onion wedges, and garlic head on a large baking sheet.
Drizzle with olive oil and season with salt and pepper.
Roast for 35-40 minutes, until the tomatoes have collapsed and the onions are caramelized around the edges.
Allow vegetables to cool slightly.
Step 2: Blend the Soup
Squeeze the roasted garlic cloves from their skins.
Transfer tomatoes, onions, garlic, broth, basil, oregano, and sugar (if using) to a blender.
Blend until completely smooth.
Step 3: Simmer
Pour the blended mixture into a large Dutch oven or soup pot.
Bring to a gentle simmer over medium heat.
Stir in butter and heavy cream.
Simmer for 10-15 minutes, stirring occasionally.
Taste and adjust seasoning as needed.
Step 4: Serve
Ladle into bowls and garnish with basil, Parmesan, and cracked black pepper.
Serve hot with grilled cheese sandwiches, farmhouse sourdough, or homemade croutons.
Tips
Use garden tomatoes when they're in season for the best flavor.
A mix of Roma and vine-ripened tomatoes creates extra depth.
For an ultra-smooth soup, strain after blending.
