Grandma’s Christmas Morning Quiche

When I was a child, every Christmas morning we would wake up early, open the presents that Santa left, and then make the drive to see grandma and grandpa and get more presents. As a kid, presents were great, but as an adult, my memories of Christmas morning are of the delicious quiche grandma made for everyone. Only when I became an adult did I realize how much effort made. She must have spent hours in the kitchen. She’s been gone for over two decades, but I can still feel her presence every time I make a quiche, because the only time I had quiche as a kid was when she made it for Christmas morning.

Ingredients

  • 8 large eggs

  • 1 ¼ cups heavy cream

  • ¾ cup whole milk

  • 1 ½ cups shredded Gruyère or Swiss cheese

  • ½ cup sharp white cheddar cheese

  • 6 slices bacon, cooked and crumbled

  • ½ pound breakfast sausage

  • 8 ounces mushrooms, sliced

  • 1 large yellow onion, thinly sliced

  • 2 tablespoons butter

  • ½ teaspoon garlic powder

  • ½ teaspoon dry mustard

  • ¾ teaspoon kosher salt

  • ½ teaspoon black pepper

  • Pinch of nutmeg

Instructions

1. Caramelize the onions

Melt butter in a large skillet over medium-low heat.

Add onions and cook slowly for 20–25 minutes until deeply golden, soft, and sweet.

Remove from skillet.

2. Cook the fillings

In the same pan:

  • Cook sausage until browned.

  • Add mushrooms and cook until their moisture cooks away.

  • Stir in crumbled bacon.

Let everything cool slightly.

3. Prepare the custard

Preheat oven to 350°F.

Grease a deep 9-inch pie plate or quiche dish well.

In a large bowl whisk together:

  • eggs

  • heavy cream

  • milk

  • garlic powder

  • dry mustard

  • salt

  • pepper

  • nutmeg

4. Assemble

Spread onions, mushrooms, sausage, and bacon evenly into the dish.

Top with both cheeses.

Pour egg mixture slowly over everything.

5. Bake

Bake 45–55 minutes until:

  • center is just set

  • top is golden brown

  • edges puff slightly

Let rest 15 minutes before slicing.

That resting time gives the quiche its perfect creamy texture.
