Instructions
1. Prepare the Pan
Preheat oven to 350°F.
Line a 9x13 baking dish with parchment paper, leaving overhang on the sides for easy lifting.
2. Make the Crust
In a mixing bowl, cream together butter and powdered sugar until soft and fluffy.
Add flour, salt, and vanilla. Mix until crumbly dough forms.
Press evenly into the prepared pan.
Bake for 18–22 minutes, until lightly golden around the edges.
3. Make the Filling
While the crust bakes, whisk together sugar and flour.
Add eggs and whisk until smooth.
Whisk in lemon juice, lemon zest, lemon olive oil, and salt until silky.
Pour over the hot crust immediately after it comes out of the oven.
4. Bake Again
Return to oven and bake 20–24 minutes, until center is just set and no longer jiggles.
Do not overbake — the filling should stay soft and custardy.
5. Chill & Finish
Cool completely at room temperature, then refrigerate at least 2 hours before slicing.
Dust generously with powdered sugar just before serving.
