Summer Caprese Skewers
These little caprese skewers are one of those appetizers that disappear almost as fast as you set them down. They’re fresh, colorful, and full of simple Italian-inspired flavor—juicy tomatoes, creamy mozzarella, fragrant basil, and a drizzle of balsamic reduction all stacked onto easy-to-grab skewers. They feel elegant enough for a dinner party, but simple enough for a backyard gathering or rustic potluck table. And best of all, they are healthy and nutritious!
Ingredients
1 pint cherry or grape tomatoes
8 oz fresh mozzarella pearls
Fresh basil leaves
1–2 tablespoons olive oil
Salt and black pepper, to taste
Balsamic reduction, for drizzling (see below)
Small wood appetizer skewers
Optional Additions
Prosciutto folded between layers
Salami slices
A sprinkle of Italian seasoning
Cracked red pepper flakes
Pesto drizzle instead of balsamic reduction
Instructions
Wash and dry the tomatoes and basil leaves.
Drain the mozzarella pearls well.
Assemble each skewer in layers:
1 tomato
1 folded basil leaf
1 mozzarella pearl
Finish
Lightly drizzle with olive oil and balsamic glaze.
Finish with a sprinkle of salt and freshly cracked black pepper.
Serve chilled or at cool room temperature.
Tips
If using large basil leaves, fold them accordion-style for a prettier presentation.
Assemble a few hours ahead, but wait to drizzle with balsamic drizzle until serving so everything stays fresh.
